This year, our Executive Chef Peter Gilmore returned to MasterChef with a Finals Week pressure test challenge to recreate one of his favourite dishes without a recipe — XO pipis, crispy eggplant, southern squid, scallops, smoked bacon, striped peanuts, aioli.
The contestants met Gilmore with a quick stopover in the Bennelong kitchen at the Sydney Opera House for the dish reveal, joined by Head Chef Rob Cockerill and Senior Sous Mark Firla, before they headed back to MasterChef HQ.
