At Bennelong, Australian food and wine take centre stage, where our menu by Executive Chef Peter Gilmore is crafted in partnership with the farmers, fishermen, breeders, and providores to showcase the best of what is in season. Now, we are thrilled to collaborate with BESS Paddington, a local neighbourhood florist specialising in Australian native wildflowers, to create incredible floral art installations for the Bennelong dining room.
Spring has been in full bloom with the largest vase of Waratahs, flannel flowers at their peak in September, and Caesia Eucalyptus.
